The difference between MAP (Modified Atmospheric Packaging) and Vacuum packaging is that rather than reducing bug growth by vacuum, MAP (also known as “Gas Flushing”) seeks to change the makeup of the air inside the pack that to inhibit bug growth. This technique is particularly useful for products that will not stand hard vacuum or they tend to spoil or change colour in low oxygen situations.
